Paleo, GAPs, Grain, Dairy & Sugar Free Crepes

 
Usually for wraps we use this very easy recipe from Cara at Health, Home Happiness.  It works really well for savoury things like my Savoury Pancakes and packed lunch items like chicken or tune and homemade mayo wraps. 
 
However we wanted a sweet version and the egg really comes through in that version so I wanted to try and make it taste more like a traditional English Pancake or crepe. 
 
Crepes
 
Makes approximately 6 depending on your pan size.
 
Equipment: bowl, hand blender, frying pan (small works best), metal spatula and knife to help flip them over. 
 
3 eggs
2 tbsp coconut milk
1/2 tsp grass fed gelatin granules (like Great Lakes)
1 tbsp coconut flour
1tsp honey
coconut oil for frying
 
NB the honey makes them brown quickly so you have to be on your toes to turn them. 
 
Mix all the ingredients in a bowl and heat your coconut oil in the pan.  Spoon enough batter into the pan to allow a thin covering of mixture evening turning the pan around to spread it as you go.  Use the metal spatula and knife to flip it over when the edges are brown - they are quite fragile so you will have to do this gently.  Cook on reverse side for 30 seconds to a minute then flop onto a plate. 
 
Enjoy with any filling you can come up with - Banana and peanut butter, chocolate sauce, strawberries and yogurt etc.
