GAPs, Paleo Pizza Chicken

 
"Oh no, not chicken again" Thomas moaned as I picked him up from school and asked what was for tea.  Oh dear I had better get my thinking hat on and make the chicken more exciting?!
 
We get our sausages and bacon online from a butcher in Devon called Devon Rose who used no sugar or nitrates as preservatives and I had some bacon that needed to be used.  After scouring the cupboards and fridge I settled on this combination and so mammy's pizza chicken was born!
 
Pizza Chicken
 
1 organic free range chicken breast per person
Nitrate free ham or bacon
Tomato paste
Dried oregano or basil
Organic cheddar cheese
 
Slice the chicken in half length wise and spread 1tbsp of tomato puree on the inside.  Sprinkle with the basil and/or oregano and top with the ham/bacon and cheese.  Place in an over proof dish and cook in the oven covered with foil or a lid for 25 minutes at 200 degrees. 
 
I served this with cucumber and Thomas's favourite celery sticks topped with peanut butter and raisins (his combination not mine).  It would also be good cold in a lunch box.
