Chocolate Chip Cookies - Grain Free, Gluten Free, Dairy Free and Egg Free, SCD, Paleo and GAPS Friendly

I must confess these took a few goes to my recipe variations right, however I really didn't mind eating the mishaps as they all tasted fab.  This is my officially kid tested recipe that is just delicious and reminds me of Millies Cookies (which obviously we can no longer have).  I have used dark chocolate chips which do contain some sugar, so have also posted a GAPs Friendly version below for those avoiding any refined sugar/soya lecithin at all.  All versions are delicious!

Basic Choc Chip Cookie Recipe

Makes 12

Equipment : bowl, spoon, baking parchment and baking try
100g of ground almonds
2 tbsp. honey
2tbsp organic butter (unsalted) or coconut butter
a pinch of salt
1/8 tsp bicarbonate of soda
1/2 tbsp. of powdered gelatine (like Great Lakes from Amazon)
1/2 tbsp. vanilla essence (no sugar)
35g dark chocolate chips

Mix the almonds with the honey,  salt, butter, gelatine and vanilla essence in a bowl until it forms a dough.  Sprinkle on the bicarbonate of soda and chocolate chips and mix in well.  Take small scoops (I used 1tbsp measure) and mould them into a ball, placing on a baking sheet.  Flatten them down and bake in the oven on 180 degrees for 6 - 9 minutes (keep checking them - mine take about 7 minutes in my oven). 

Keep them on the baking parchment and transfer to a cooling tray.  Wait 10 agonising minutes before trying them or they will fall apart.  They should be soft and chewy. 


You can make them without the gelatine, however they are much more crumbly and do not hold together till the next day. 

GAPs diet - make a small batch of my caramel/toffee (about 1.5 tbsp. of butter and honey with a pinch of salt) and let it cool in the freezer for 1/2 an hour.  Take it out and bash it up into chunks and use instead of chocolate chips.  Bake cookies for 7 mins only or the caramel starts to melt. 

Also on GAPs you could use GAPs chocolate chips as described here in this post but again use it from the freezer or it will melt apart. 
Double Chocolate Chip - add 1.5 tbsp. of coco powder to the mix.  I also added some orange essence and some orange flavoured choc chips - yum!

Enjoy!!  We did they were eaten pretty much as soon as they were cool enough to hold!

I can understand the absolute columns and air-conditioned this is most definitely ! I am animated that you have to aggregate this! And , it is absolutely acceptable , you accept the important point !
