Chicken Fajita Salad - GAPs & Paleo Friendly, Grain Free.

I adore fajitas and they are one of the things I miss the most.  I am working on a good tortilla recipe, but in the interim I've found that I equally enjoy fajias with either a lettuce wrap or like this as a hot salad.  Despite having lots of parts to it, this recipe is fairly quick and easy to make and my whole family enjoy it. 

Fajita Mix

Serves 4

Marinade:

  • 1tsp dried chilli flakes
  • 1 - 2 cloves of crushed garlic
  • 1 tbsp. of fresh oregano or 1 tsp of dried oragano
  • juice of 1/2 a lime
  • grated rind of 1 lime
  • 1 tbsp. paprika
  • salt and pepper to taste

Other ingredients:

  • 4 chicken breast or equivalent of grassfed beef or prawns
  • 1 large onion
  • 2 peppers
  • 10 medium sized mushrooms
  • coconut oil for frying


Ideally marinade the chicken in the mix above for ideally 2 hrs or more before cooking. 

Heat the oil in a wok or frying pan.  Add the garlic and onions and start to fry, then add chicken, mushrooms and peppers.  If you didn't have time to marinade the chicken, add all the other ingredients now and fry until vegetables are softened and chicken is cooked through.  If you are good at multi tasking you could make the guacamole and salsa while it is cooking!


Salsa

  • 3 large tomatoes (ideally with the skins removed) chopped and deseeded,
  • 1/2 a pepper
  • 1 spring onion
  • 1 tbsp. of chopped corriander
  • 3 - 4 chopped sundried tomatos
  • squeeze of lemon juice or splash of red wine vinegar
  • 1/2 tsp honey
  • salt and pepper to taste

Pulse all the ingredients together in a food processor until mixed but not completely blended.  Pour in a dish ready to serve. 

Guacamole

  • 2 avocados
  • 1 small clove of garlic crushed
  • juice of half a lime
  • 1 tbsp. salsa

Put ingredients in food processor and blend until smooth.  Pour in a dish ready to serve.


When everything is ready either serve with lettuce shells, cheese and sour cream (if tolerated) or you could try my Paleo Pancake or GAPs Crepe recipes for wraps.
