Turmeric & Cayenne Chicken Soup

With the winter weather, there is nothing better than a bowl of hot soup.  I love chicken soup as it has so many healing properties for the body, and it is a great way to make the most of your chicken after the Sunday roast. Plus, soups are a great way to sneak in more vegetables in a tasty way. 

This recipe includes spices like Turmeric which is an amazing anti-inflammatory spice, and Cayenne Pepper which is warming to the body, helps digestion by stimulating salivary glands and improves detoxification by helping to dilate capillaries increasing blood flow. 

There are also ancient proven benefits from including homemade stock or bone broth in the diet. In this video Tutorial Dr Josh Axe demonstrates how easy it is to make and how great it can be for digestion, hair, skin and nails.

My recipe includes my own chicken bone broth but you could just as easily use pre-made stock.  


Ingredients (makes 2 - 3 portions)

  • 1tsp Olive oil (or butter/coconut oil)
  • 1 large carrot
  • 1 sweet potato
  • 1 medium parsnip
  • 1 onion
  • 1 stick of celery
  • 1/2 a small butternut squash
  • 6 new potatoes
  • 1/2 to 1 tsp turmeric (I prefer 1/2 tsp)
  • sprinkle of cayenne pepper (to taste)
  • salt and pepper to taste. 
  • 1 cup of left over chicken 
  • 1 liter of Chicken Stock

Method

Chop all the vegetables into evenly sized portions and add to a large pan.  Fry lightly with the olive oil until onions begin to soften. Add the spices and fry for an additional minute.  Pour in the chicken stock and add the chicken.  Allow to simmer until vegetables are soft and stock has reduced.  Add salt and pepper to taste.  Enjoy!
