Today I got a new toy - A Vegetable Spiralizer. I had been speaking to a friend of mine, who said here kids (also on GAPs) loved their "pasta" with sauce. She made the pasta from shredded courgette and butternut and used a spiralizer. I have tried making courgette ribbons for pasta using a julienne cutter, but this did seem simpler. So I succumbed and found one on ebay for a fairly reasonable amount. The picture of it and link for the seller are below. So this evening I knocked up "Pasta" & Pesto with Chicken, which prior to GAPs was one of Thomas' most favourite foods. I was sceptical but he loved it and ate it all up without complaint, despite regularly telling me he doesn't like courgettes!! Here is the recipe.
"Pasta" & Pesto
1 medium courgette per person spiralized on the thinnest setting.
1 chicken breast per person cooked and sliced
2 large packets of fresh basil
2 cloves of garlic
50g - 75g roasted pine nuts or roasted cashews
50g - 75g organic parmesan cheese (omit if no dairy)
1/2 cup extra virgin olive oil.
Put all pesto ingredients in food processor and blend until chunky consistency. Add more or less oil as desired. To help preserve add a squeeze of lemon juice.
Boil some water and blanch the courgette pasta for a few minutes until tender.
Drain and mix in the pesto immediately and add the chicken. Eat immediately.
We also like to add some sun dried tomatoes to the pesto mixture too. This is also great inside a chicken breast, wrapped in parma ham.
