Spiced Apple Cake & Custard - Paleo, GAPs, Dairy & Grain Free

We had a big box of apples my husband had collected from a friends tree and apart from apple sauce, I wanted to make something warm and comforting and quick to make. As I can now make my coconut flour cake recipe in my sleep I just made a couple of adjustments and came up with this recipe: 
 
Apple cake
makes 7" cake
 
Equipment: hand blender, bowl, 7" cake pan.
 
4 apples pealed and sliced thinly+
3 tbsp honey
1tsp lemon juice
1 cinnamon
3 eggs (I use duck eggs for cakes)
4 tbsp coconut flour
2 tbsp coconut milk
2 tbsp coconut oil or butter (melted)
2 tbsp honey
1 tbsp vanilla essence
1/2 tsp bicarbonate of soda
1/2 tsp apple cider vinegar (optional but it helps the cake rise)
 
Mix the pealed and sliced apples in a bowl with 1 tbsp of the honey, the lemon juice and cinnamon. Then lay them on the base of the cake dish. 
 
Mix the eggs, coconut milk, coconut oil, honey and vanilla with a hand blender in a bowl.  Add the coconut flour and mix again with the hand blender.  Stir the bicarbonate in by hand and then stir in the apple cider vinegar by hand.  Pour the mixture over the apples. 
 
Bake for up to 30mins on 180 degrees. 
 
I served mine with chilled coconut cream, but this custard is yummy and would go really well. 
 
Custard
 
Equipment: pan, bowl and hand whisk
 
3 egg yolks
1 - 2 tbs honey
1 tbsp vanilla
1 can coconut milk or 400 ml of home made. 
 
Gently warm the coconut milk in a pan. Split the eggs and put the 3 yolks in a bowl.  Whisk in the honey and vanilla to the egg yolks.  Slowly add a little of the warm coconut milk to the yolk mixture whisking all the time.  Once it is fully mixed pour back into the pan and heat slowly, stirring constantly until the mixture thickens. Don't let it boil.
