My parents were coming to stay and they love their afternoon tea, so I wanted to make something we could all share. This Lemon Loaf has turned out to be a great favourite and it very easy to make, being grain, nut and dairy free.
Makes 6 large slices
Equipment: hand blender, bowl, mixing spoon, loaf tin (small 6x4x2.5)
2 tbsp. coconut oil or butter (melted)
2 tbsp coconut milk or yogurt
1 - 2 tbsp. honey
4 1/2 tbsp. coconut flour
zest of 1 lemon.
1tbsp lemon juice
1 handful of raisins
1/4 tsp bicarbonate of soda
dash of apple cider vinegar (optional)
Put the eggs, honey, coconut oil, coconut milk lemon zest and lemon juice in a bowl and mix with the hand blender. Add the coconut flour and mix again with the blender. Stir in the raisins and bicarbonate of soda - mix well with a spoon. Finally add the apple cider vinegar if you are using it to get extra lift.
Pop in the oven on 180 degrees for 30 mins. If it is browning too fast cover with baking parchment.
Serve warm or cold with butter if you can tolerate it or just on its own.
