This overabundance of wheat in the diet the world over is being blamed for the increase of wheat allergies and intolerances.  Increased research indicates that close to 1 in 100 people could suffer from Coeliac Disease, an autoimmune disease which is developed by the ingestion of gluten by sensitive individuals.
