Chilli with Chocolate

Chilli Con Carne with Chocolate
(Gluten free, dairy free, Paleo, GAPs diet, egg free and nut free)

This is one of my week night go to meals as I can make a huge batch and freeze it up in portions.  Whilst this tastes amazing on nachos, loaded with cheese, sour cream & guacamole or with a size of rice, sticking to my current Paleo challenge for January has meant I just enjoyed it by its self with a chopped avocado.  

I try to avoid stock cubes as many of them have gluten, yeast and a whole host of E Numbers, so to make this Chilli nice and rich i add a little coco powder, which really brings out the flavor of the beef and tomato.

 During the winter we get so many amazing variations of Squash available in the Supermarket.  My all time favorite is Butternut as I find it so versatile.  I add it to pancakes, curries, soups and of course roasted as a side dish it tastes great especially with my home roasted ham or a grass fed steak.  It is naturally high in B Vitamins, Beta Carotene and other carotenoids such as lycopene, lutein, and zeaxanthin which can be protective against some cancers, protective for the skin and eyes.

Paleo, Dairy Free, Gluten/Grain Free & Refined Sugar Free. 

This is a great recipe with a hidden ingredient (shhhh don't tell the kids it has avocado in it!).  It is low in refined sugar and really creamy.  We used an ice cream maker, but you could ude just a dish and your freezer as long as you remembered to stir it regularly.  It does need to be taken out of the fridge a while before serving if it has frozen through completely.  I used the lovely doTERRA Peppermint Oil, which has an amazing flavour and aroma.

Chicken Fruity Curry - GAPs Paleo Friendly, Gluten, Grain, Dairy , Egg and Nut Free

I absolutely love this curry.  We are from the North East of England (Geordies) and up there most curry houses serve a Malayan Curry which is similar to a Korma but has banana and pineapple in it.  I have never seen it "down south" the closest is maybe a Kashmiri.  This is a close relative, but without all the sugar and dairy you find in a Take Away.  It is mild and naturally sweet so great for children.  

Fruity Chicken Curry

Serves 4 adults 

  • 4 Chicken breasts chopped into pieces (or 4 handfuls of left over roast chicken)

Breakfast Patties - GAPs, Paleo friendly, grain, gluten, dairy and egg free.

On a GAPs or Paleo diet I find the hardest meal to replace is breakfast.  Our "normal" breakfast foods like cereals, toast, pastries, muffins etc are so carbohydrate heavy.  Any replacements end up using loads of eggs, and whilst I am a fan of eggs I like some variation.  I am happy with a traditional english breakfast, but don't want this every day, plus finding nitrate free sausages and bacon is hard in the UK.  So I wanted some simple breakfasts I could make in advance and either heat up or put in the oven in the morning as we are getting ready.
