This is one of my week night go to meals as I can make a huge batch and freeze it up in portions.  Whilst this tastes amazing on nachos, loaded with cheese, sour cream & guacamole or with a size of rice, sticking to my current Paleo challenge for January has meant I just enjoyed it by its self with a chopped avocado.  

I try to avoid stock cubes as many of them have gluten, yeast and a whole host of E Numbers, so to make this Chilli nice and rich i add a little coco powder, which really brings out the flavor of the beef and tomato.

 During the winter we get so many amazing variations of Squash available in the Supermarket.  My all time favorite is Butternut as I find it so versatile.  I add it to pancakes, curries, soups and of course roasted as a side dish it tastes great especially with my home roasted ham or a grass fed steak.  It is naturally high in B Vitamins, Beta Carotene and other carotenoids such as lycopene, lutein, and zeaxanthin which can be protective against some cancers, protective for the skin and eyes.

With the winter weather, there is nothing better than a bowl of hot soup.  I love chicken soup as it has so many healing properties for the body, and it is a great way to make the most of your chicken after the Sunday roast. Plus, soups are a great way to sneak in more vegetables in a tasty way. 

This recipe includes spices like Turmeric which is an amazing anti-inflammatory spice, and Cayenne Pepper which is warming to the body, helps digestion by stimulating salivary glands and improves detoxification by helping to dilate capillaries increasing blood flow.

Chicken Fruity Curry - GAPs Paleo Friendly, Gluten, Grain, Dairy , Egg and Nut Free

I absolutely love this curry.  We are from the North East of England (Geordies) and up there most curry houses serve a Malayan Curry which is similar to a Korma but has banana and pineapple in it.  I have never seen it "down south" the closest is maybe a Kashmiri.  This is a close relative, but without all the sugar and dairy you find in a Take Away.  It is mild and naturally sweet so great for children.  

Fruity Chicken Curry

Serves 4 adults 

  • 4 Chicken breasts chopped into pieces (or 4 handfuls of left over roast chicken)

Breakfast Patties - GAPs, Paleo friendly, grain, gluten, dairy and egg free.

On a GAPs or Paleo diet I find the hardest meal to replace is breakfast.  Our "normal" breakfast foods like cereals, toast, pastries, muffins etc are so carbohydrate heavy.  Any replacements end up using loads of eggs, and whilst I am a fan of eggs I like some variation.  I am happy with a traditional english breakfast, but don't want this every day, plus finding nitrate free sausages and bacon is hard in the UK.  So I wanted some simple breakfasts I could make in advance and either heat up or put in the oven in the morning as we are getting ready.

Thai Style Beef Soup - Soya, Gluten, Dairy, Egg and Sugar Free, GAPs, SCD and Paleo Friendly

The weather has been so awful recently I have really wanted something warm for lunch.  Whilst comforting root vegetable stews and soups are nice, this offers a nice variation and uses up some left over roast beef from a Sunday lunch.  It also reminds me of the Thai/Chinese noodle type soups which would obviously contain wheat, and the beansprouts add an interesting texture.  I make this soup with Coconut Aminos but you could easily make it with Tamari for a Gluten Free Soya Sauce option.

Chocolate Chip Cookies - Grain Free, Gluten Free, Dairy Free and Egg Free, SCD, Paleo and GAPS Friendly

I must confess these took a few goes to my recipe variations right, however I really didn't mind eating the mishaps as they all tasted fab.  This is my officially kid tested recipe that is just delicious and reminds me of Millies Cookies (which obviously we can no longer have).  I have used dark chocolate chips which do contain some sugar, so have also posted a GAPs Friendly version below for those avoiding any refined sugar/soya lecithin at all.  All versions are delicious!

Grain Free Great British Bake Off - Lemon Cake

I was watching a tutorial programme last night by Mary Berry and she made a fantastic looking cake with whipped cream, lemon curd and passion fruit.  It looked amazing and totally made my mouth water for cake so I decided to have a go at a lemon cake recipe today that I definitely think I can adapt in the future to look like hers - ha ha ha!!
Unfortunately we can't eat the ton of sugar, flour and whipped cream she used so I had to get my thinking cap on.  Here is the recipe I came up with and how I would make my adaptions:

GAPs "Pasta" & Pesto - Gluten & Grain Free

Today I got a new toy - A Vegetable Spiralizer.  I had been speaking to a friend of mine, who said here kids (also on GAPs) loved their "pasta" with sauce.  She made the pasta from shredded courgette and butternut and used a spiralizer.  I have tried making courgette ribbons for pasta using a julienne cutter, but this did seem simpler.  So I succumbed and found one on ebay for a fairly reasonable amount.  The picture of it and link for the seller are below.

3 Starter Soups for Kids on GAPs

One generalisation I have found with children on the GAPs diet, is that after a while they HATE soup, so you have to come up with ways of making it more attractive.  The broth is a vital part of the healing process for the bowel, and if you are like us and struggle to drink it neat, then soups are an important way of getting this nutrition in. 
As we are now mostly on Full GAPs we don't have soup for every meal but I do try to have some every day.  Here are 3 soups that both of my children like and will eat without argument at least once a day as a "starter" for their evening meal.
